Dr. Paolo Passaghe, after graduating in Food Quality Control and Management, received his PhD in Food Science (2014), with a study on colloidal stability of craft beers brewed with gluten-free substitutes, from the University of Udine. He then started working in the research and development section (Brewing Science Group) at the Department of Agri-food, Environmental and Animal Sciences, University of Udine as a collaborator of Prof. Stefano Buiatti. He is now the technician of the experimental micromaltery at the University of Udine.
